Pan Seared Cod a la Puttanesca with Roasted Fingerling Potatoes

Puttanesca is an Italian pan sauce with a tangy, bold flavor, normally served on pasta. But since this sauce is so good, why limit it to only pasta and why not pair it with fish? A match made in heaven. To start, we quickly pan sear a filet of cod, a mild white fish, with salt and pepper to create a crispy outer texture. Meanwhile, we combine garlic, dry white wine, kalamata olives, sliced cherry tomatoes, roasted eggplant, capers and olive oil and reduce into a rich Puttanesca sauce. We finish the cod in the oven, until the fish is flaky and perfect and then top it with our Puttanesca sauce. On the side, seasoned roasted fingerling potatoes. A healthy, flavorful, and satisfying gourmet meal.
